*Veggie Tacos
-2 large zucchini
-1 red onion
-2 clove garlic
-1 can black beans
-1 packet favorite taco seasoning
-multi-grain tortilla shells
-non-fat Greek yogurt
-favorite salsa
-clover sprouts
-reduced fat shredded fiesta cheese

1) Thinly slice onion, begin to saute in a little olive or canola oil
2) mince garlic and add to onion
3) rinse black beans and add to garlic and onion
4) dice zucchini and add to mixture in pan
5) once sweated add taco seasoning and recommended water
6) cook down until thick, take off heat
7)ready shells, and layer with remaining ingredients and pan mix as desired, roll up and ENJOY!!!!!
Ice cream alternative:
-1 cup non-fat Greek yogurt
-Handful of your favorite fruit (strawberries, blueberries, blackberries, etc...)
-1 tbsp agave nectar

Cut up fruit in bowl. Toss with agave, cover with yogurt and ENJOY!!!
Just because they call me Cupcake doesn't mean I am a one note pastry gal. I came up with a brilliant healthy alternative to the traditional taco dip!
*Ingredients
-1 red onion
-1 fresh jalapeno
-1 can black beans
-2 avacados
-2 plum tomatoes
-4 cloves garlic
-small handful cilantro
-2 cups non-fat Greek yogurt
-1/4 cup canned jalapenos
-1 jar of your favorite salsa
-handful of romaine or iceburg lettuce

1) Saute onion and jalapeno, until soft and slightly browned
2) add can of black bean (rinsed)
3) layer in pan for serving, and chill
4) dice avacado and tomatoes, mince garlic and cilantro
5) mix avacado, tomato, garlic, and cilantro. season with salt and pepper
6)layer on top of cooled bean mixture
7) chop canned jalapeno and mix into Greek yogurt
8) layer on top of avacado mixture
9) layer favorite salsa onto yogurt
10) layer lettuce on the very top

Finally get your favorite multi-grain chips dip down and ENJOY!!!
